Also quite tasty in March
Ingredients:
- 2 medium potatoes, peeled and cut into quarter inch pieces
- 2 carrots, peeled and cut into quarter inch pieces
- 1 onion, chopped (sweet onion if you have it)
- 1 quart or 1 large can of canned tomatoes with juice
- 1 can of corn, undrained
- 1 can of green beans, undrained
- 1 chopped clove of garlic
- Add any other canned or cooked vegetable you want
Directions:
- Saute in 2 Tablespoons of butter in a large pot: Potatoes, carrots, onions, garlic
- Saute until soft
- Pour in tomatoes, corn, beans… other vegetables (Don’t drain them – their liquid carries the flavor of each vegetable.)
- Simmer for at least 30 minutes
- Taste – add salt and pepper and any other spices you like! (Some folks like hot sauce, some folks like to add red or black beans)
