Jim’s February Soup

Also quite tasty in March

Ingredients:

  • 2 medium potatoes, peeled and cut into quarter inch pieces
  • 2 carrots, peeled and cut into quarter inch pieces
  • 1 onion, chopped  (sweet onion if you have it)
  • 1 quart or 1 large can of canned tomatoes with juice
  • 1 can of corn, undrained
  • 1 can of green beans, undrained
  • 1 chopped clove of garlic
  • Add any other canned or cooked vegetable you want

Directions:

  • Saute in 2 Tablespoons of butter in a large pot: Potatoes, carrots, onions, garlic
  • Saute until soft
  • Pour in tomatoes, corn, beans… other vegetables (Don’t drain them – their liquid carries the flavor of each vegetable.)
  • Simmer for at least 30 minutes
  • Taste – add salt and pepper and any other spices you like! (Some folks like hot sauce, some folks like to add red or black beans)
