Winter Soup: Potato Soup

As of the editing of this edition of FOCOV, it really hasn’t seemed much like Winter around here. December has been one of the top 5 warmest in recorded history. But, we know what is coming… to be ready, how about a hearty bowl of soup?

These recipes from the Richardson Kitchen.

Peel and slice 2 medium size potatoes
Skin and chop 2 medium sized onions and 4 ribs celery
Saute all three of these in 1 ½ tablespoons butter

Add water to cover/boil until potatoes are tender. Whip with a fork (or use a blender). Beat in 2 tablespoons of butter. Thin soup to the thickness your family prefers using whole milk or chicken stock. Perhaps salt and pepper to taste. And a dash of Worcestershire sauce… you are now tasting! Often served in a cup with hot dogs at the Richardson’s.
