Winter Recipes – Cold day, tight budget, comfort food!

A couple of pans in the fridge just waiting to change the day! A perfect breakfast… add a fried egg with yolk somewhat runny for an ideal start for a gray day!

MUSH (without the meat)
SCRAPPLE (with meat & onion)

1½ cups corn meal
1½ cups cold water
1 teaspoon salt
A bit of grated onion
Left over pork or dark meat / scraps of any amount if you have them.
Fresh minced sage, or ½ teaspon dry

Place boiling water in top of double boiler.  Mix corn meal, cold water and salt and add the mixture to boiling water slowly stirring constantly.
Cook over high heat for 3 minutes.  Cover and let steam for 15 minutes.

For Scrapple, add meat and seasonings now.

Pour into greased bread pan. Cool & cut into ¾ inch thick slices.

Fry in butter on both sides. Serve with maple syrup or maybe applesauce!  6 – 10 slices per pan.
